Pumpkin & Ginger Soup

After a short hiatus, we are back again with another episode of Paul Mc’s Monthly Meals. As it is “spooky season”, we have decided to pumpkin-spice things up for this monthly meal. 

Sadly, each year nearly 15 million pumpkins are dumped, 5.5 billion litres of water are wasted and 99,000 tones of useless CO2e are emitted. The Wellness shop and Paul Mc Nutrition are here to provide you with a recipe that will not only prevent some of this food from going to waste but it will also taste great!

Paul Mc, our nutritional guru, has been cooking up a storm recently with his weekly recipes, which have been extremely popular amongst his followers. Paul’s recipes are so simple but so tasty and that seems to be the winning formula. 

So, with the nights getting colder and darker, Paul wanted to give you a new and exciting recipe that would keep you warm and healthy on these cold and chilly nights. This month’s recipe is a super-tasty and nutritious Pumpkin & Ginger soup.

To make this delicious soup, you’re going to need several ingredients, but don’t worry, you can get all of them at The Wellness Shop and TheWellnessShop.ie. 

Here’s what you will need:

  • A Pumpkin
  • One Onion
  • Ginger
  • 1 Litre of Organic Vegetable Stock
  • Lime 
  • Organic Coconut Milk 
  • Fresh parsley

 

Method:

  1.  Bring your pot to medium heat and add some olive oil
  2.  Dice your onion, chop the pumpkin into cubes and peel and chop your ginger
  3.  Add your diced onion to the pot along with your chopped pumpkin and ginger
  4.  Let it cook down for a few minutes
  5.  Now, add one litre of vegetable stock with 125ml of coconut milk
  6.  Let it simmer for 40-minutes until the pumpkin is soft
  7.  Blend it
  8.  Add to the bowl
  9.  Serve with a little more coconut milk and fresh parsley.
  10.  Enjoy. 

 

It’s +that easy, serve this with some of Lyon’s beautiful sourdough or bread of your choice…
